A Taste of Transparency: A Closer Look at Plant-Based Alternatives From Ingredient to Product to Plate

Objective:  To provide a deeper look into what makes “plant-based” foods, from ingredient to product to plate.

Event Description:  Health, along with sustainability, is one of the primary reasons consumers have gravitated toward “plant-based” alternative products.   In the last year, dozens of major fast-food chains have introduced plant-based burgers to their menus, while CPGs, including titans within animal protein, are trying to cultivate new products and markets through plants or blended products.  However, while many of these products are being marketed and perceived as “healthy” alternatives, there is question as to whether these products are simply the next generation of processed foods.   In this Conversation Catalyst, we’re taking a looking beyond the hype and billion dollar valuations and bringing together a food scientist, nutritionist and plant-forward chef to uncover the makeup of these “analogues” and how they stack up nutritionally and culinarily to whole foods.
